I love this quick little meal to make with my left over sushi rice, tofu katsu and teriyaki sauce.
Lay nori sheet out on a sushi mat or a piece of saranwrap. Spread a thin layer of sushi rice out on the nori in a 2" by 2" square. Use the damp back end of a spoon to smooth it into place.
Place a piece of tofu katsu that's about 2" by 2" in the center of the nori on the rice. With a spoon smooth some spicy mayo across the surface of the katsu, follow that up by drizzling teriyaki sauce over that.
Place a layer of carrots followed by Japanese pickles, green onions and a sprinkle of sesame seeds if you're using them. Folding the lettuce to be about 2" by 2" place it on top of everything.
Take a cup or a small bowl with room temp water and dip your fingers into it, then trace them along the entire outside edge of the nori. Wetting about a 1" thick line all the way around the edges. Dry your fingers off and take the Bottom and top edges, gently folding them in towards the center of he sandwich. Follow up by folding the sides in on top, like a little package. The dampened edges should have made the nori sticky and allows it to stick to itself.
Placing the seam side down and using a very sharp knife slice the sandwich in half. Repeat the above steps for the 2nd sandwich.
I love serving this with a Japanese cucumber salad.
